Lemonade Scones

  1. Preheat fan-forced oven to 220 degrees celcius
  2. Sift self-raising flour and salt into a large mixing bowl. Create a well in the centre and add the lemonade and 1 cup of thickened cream
  3. Mix ingredients with a knife until all ingredients come together
  4. Turn your dough out onto a lightly floured surface, and knead slightly until smooth
  5. Cut scones into rounds using a scone cutter, or the open end of a glass cup and arrange closely on a greased tray or baking paper
  6. Bake in an oven for 10 - 15 minutes or until golden on top
  7. To make the cream, add the remainder of the thickened cream, sugar and vanilla extract to a mixing bowl and whip until firm
  8. Top halved scones with jam and cream. Enjoy!
