Lemonade Scones
- 3 cups self-raising flour
- 1 cup lemonade
- 1 pinch salt
- 600 milliliters cream thickened
- 1 tablespoon white sugar
- 1 dash vanilla extract
- strawberry jam
- Preheat fan-forced oven to 220 degrees celcius
- Sift self-raising flour and salt into a large mixing bowl. Create a well in the centre and add the lemonade and 1 cup of thickened cream
- Mix ingredients with a knife until all ingredients come together
- Turn your dough out onto a lightly floured surface, and knead slightly until smooth
- Cut scones into rounds using a scone cutter, or the open end of a glass cup and arrange closely on a greased tray or baking paper
- Bake in an oven for 10 - 15 minutes or until golden on top
- To make the cream, add the remainder of the thickened cream, sugar and vanilla extract to a mixing bowl and whip until firm
- Top halved scones with jam and cream. Enjoy!
