Grilled Fig And Goat Cheese Pizza
- 3/4 pound pizza dough
- 6 figs Black misson, can substitute with any fresh fig
- 8 ounces fig Preserve
- 1 container goat cheese crumble
- 2 slices prosciutto Parma
- 1 sprig fresh rosemary
- balsamic reduction
- baby arugula for garnish
- Pre heat grill, medium low heat. half figs and brush with olive oil. Grill cut side down about 8 minutes. gently remove with metal spatula. reserve in small bowl.
- Insert pizza dome and cooking platform in the oven and preheat oven at 500 degrees 30 minutes prior to baking the pizza.
- Place jar of fig jam in small bowl of hot tap water for 15 minutes . This will make for easy spreading.
- Place 14 inch round parchment paper on pizza peel.
- Stretch the dough and place on parchment paper.
- Spread a thin even layer of fig jam on the dough.
- Top with crumbled goat cheese
- Place fig halfs cut side
- Tear parma into strips and place on pizza
- Sprinkle a little fresh rosemary
- Insert into preheated oven. Average cooking time is 8 minutes.
- When the pizza is done garnish with arugula and drizzle reduction and serve
