Grilled Fig And Goat Cheese Pizza

  1. Pre heat grill, medium low heat. half figs and brush with olive oil. Grill cut side down about 8 minutes. gently remove with metal spatula. reserve in small bowl.
  2. Insert pizza dome and cooking platform in the oven and preheat oven at 500 degrees 30 minutes prior to baking the pizza.
  3. Place jar of fig jam in small bowl of hot tap water for 15 minutes . This will make for easy spreading.
  4. Place 14 inch round parchment paper on pizza peel.
  5. Stretch the dough and place on parchment paper.
  6. Spread a thin even layer of fig jam on the dough.
  7. Top with crumbled goat cheese
  8. Place fig halfs cut side
  9. Tear parma into strips and place on pizza
  10. Sprinkle a little fresh rosemary
  11. Insert into preheated oven. Average cooking time is 8 minutes.
  12. When the pizza is done garnish with arugula and drizzle reduction and serve
