Good-For-You Beef Stroganoff
- 1/3 pkg. (4 oz.) No Yolks noodles
- 1 lb. lean beef round steak, cut 1/2-inch thick
- 2 medium onions, thinly sliced (about 1 1/2 c.)
- 1 lb. mushrooms, halved or quartered (if large)
- 3 Tbsp. catsup
- 2 tsp. dry mustard
- 1/4 tsp. cracked black pepper
- 1 1/2 c. plain nonfat yogurt, mixed with 2 teaspoons cornstarch
- chopped parsley
- Cook No Yolk noodles according to package directions without salt.
- Meanwhile, cut beef across grain into 2 x 1/2-inch strips. Cook meat in large nonstick skillet over medium heat until browned.
- Remove and reserve meat.
- Drain and discard any liquid in skillet.
- Add water to skillet.
- Stir in onions and mushrooms; saute until tender.
- Add catsup, mustard and pepper.
- Drain noodles.
- Add noodles, reserved meat and yogurt mixture to skillet.
- Heat through, stirring occasionally; do not boil. Garnish with parsley.
- Makes 6 (1 cup) servings.
