Good-For-You Beef Stroganoff

  1. Cook No Yolk noodles according to package directions without salt.
  2. Meanwhile, cut beef across grain into 2 x 1/2-inch strips. Cook meat in large nonstick skillet over medium heat until browned.
  3. Remove and reserve meat.
  4. Drain and discard any liquid in skillet.
  5. Add water to skillet.
  6. Stir in onions and mushrooms; saute until tender.
  7. Add catsup, mustard and pepper.
  8. Drain noodles.
  9. Add noodles, reserved meat and yogurt mixture to skillet.
  10. Heat through, stirring occasionally; do not boil. Garnish with parsley.
  11. Makes 6 (1 cup) servings.
