Rice With Shrimp & Pineapple
- 2 tablespoons olive oil
- 1 boneless, skinless chicken breast halves
- 1 onion medium, chopped
- 1 red bell pepper medium, diced
- 2 cloves garlic finely chopped
- 1/2 teaspoon salt
- 1 cup pineapple chunks in natural juice, drained
- 1 cup regular or converted rice
- 2 1/4 cups water
- 1 tablespoon knorr tomato bouillon with chicken flavor
- 1 knorr sazon with coriander and annatto
- 1 pound uncooked medium shrimp, peeled and deveined
- hot pepper sauce to taste
- 1/2 cup sliced green onions
- 1/2 cup chopped cilantro
- In large saucepot, heat olive oil over medium heat and brown chicken. Remove chicken and set aside.
- In same saucepot, cook onion, red pepper, garlic and salt, stirring occasionally, 3 minutes. Stir in pineapple, rice, water, Knorr(R) Tomato Bouillon with Chicken flavor and Knorr(R) Sazon with Coriander and Annatto. Bring to a boil over high heat. Reduce heat to low and simmer covered 20 minutes. Return chicken to saucepan, then stir in shrimp. Simmer covered 5 minutes or until chicken is thoroughly cooked and shrimp turn pink. Stir in hot pepper sauce. Garnish with green onions and cilantro.
