Maple Oat Crispies
- 1 c. sugar
- 1 c. brown sugar
- 2 sticks soft butter
- 1 Tbsp. molasses
- 2 tsp. maple extract
- 2 eggs
- 1 3/4 c. flour
- 2 tsp. baking powder
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 2 c. rolled oats
- 2 c. Rice Krispies cereal
- 1 c. butterscotch chips
- Heat oven to 350u0b0.
- Grease cookie sheets.
- In large bowl, beat sugar, brown sugar and butter until fluffy.
- Add molasses, maple extract and eggs; blend well.
- Add flour, baking powder, cinnamon and salt.
- Mix at medium speed until well blended.
- Stir in oats, rice cereal and chips.
- Drop by heaping teaspoonfuls 2 inches apart on greased cookie sheets.
- Bake at 350u0b0 for 8 to 12 minutes or until light golden brown.
- Cool 2 minutes; remove from cookie sheets.
- Store in an airtight container.
- Makes 5 dozen.
