Grilled Calamari, Mango Salad And Crispy Shallots
- 2 green chilies small, deseeded
- 2 tablespoons fish sauce
- 1 tablespoon lime juice
- 1 tablespoon palm sugar grated
- 2 mangoes diced
- 2 spring onions sliced
- 1 1/4 cups cilantro leaves fresh
- 1/4 cup fresh mint leaves
- 1/2 cup cashews toasted
- 1 tablespoon oil
- 1 pound calamari cleaned, halved lengthwise and insides scored in a diamond pattern
- 4 shallots sliced and deep-fried
- Combine green chilies, fish sauce, lime juice and palm sugar in a food processor. Process until smooth. Toss with mango, spring onion, cilantro, mint and cashews.
- Preheat grill or broiler. Coat calamari in oil then cook for 2-3 mins. Serve with mango salad, sprinkled with crispy shallots.
