Joe Stuckey'S Own Chili
- 1 lb. ground beef
- 1 lb. cubed beef (stew meat chopped into chunks)
- 1 lb. ground pork
- 1/4 c. olive oil
- 1 qt. water
- 4 beef bouillon cubes or 4 tsp. powdered beef bouillon
- 2 bay leaves
- 10 cloves finely chopped garlic
- 6 Tbsp. fresh chili powder
- 3 Tbsp. fresh paprika
- 1 Tbsp. sugar
- 1 tsp. cumin
- 1 tsp. oregano
- 2 pkg. Chili Man chili powder or 2 (4 oz.) cans green chili peppers
- 12 red chili japones
- 1 to 2 (8 oz.) cans tomato sauce
- 2 large chopped onions
- 2 cans kidney beans
- 1 can pinto beans
- chopped raw onions and shredded Cheddar cheese (to taste)
- Heat 1/4 cup olive oil in skillet.
- Add the cubed beef and simmer until gray.
- Meanwhile in a 6-quart pot, place 1 quart water, beef bouillon and bay leaves.
- Turn heat to high.
- When cubed beef is gray (to brown color), add to pot, then in turn, brown ground pork in skillet and add to pot.
- Then brown ground beef in skillet and add to pot.
