Moist Colomba Easter Cake

  1. Prepare the dough with the flour, sugar, butter, yeast, salt, eggs, extract, and the orange zest, but only half of the water. Once the ingredients have been incorporated, add the remaining water, a little at a time.
  2. Knead the dough for approximately 30 minutes with the mixer until it is smooth and elastic.
  3. Let the dough rest, covered, turning it over occasionally a few times, for approximately 1 hour.
  4. Divide the dough into two equal parts.
  5. Roll up each piece first in one direction and then in the other.
  6. Each roll is then to be cut in half and rolled up again one time. Now lengthen the pieces for the dove's body and wings and place them in the appropriate cake pans.
  7. Let the dough rest in the pans until it doubles in size.
  8. Prepare the topping by combining the flour with the sugar and adding a little water until the mixture is a thick cream, it should not drip.
  9. Brush the topping carefully on the cakes and sprinkle with granulated sugar and a generous coating of powdered sugar.
  10. Bake at 200Ce for approximately 25 to 30 minutes. Do not brown too much or the cakes will become dry.
  11. Remove the cakes from the oven and let cool completely.
