Cheesy Hot Bean Dip
- 1 c. chopped celery
- 1 c. chopped onion
- 2 cloves garlic, minced
- 1 (8 oz.) bottle taco sauce
- 1 (4 oz.) can green chili peppers
- 1/2 tsp. chili powder
- 2 c. shredded Cheddar cheese
- 2 Tbsp. oil
- 1/2 (16 oz.) can (1 c.) refried beans
- tortilla chips
- In a medium skillet, cook celery, onion and minced garlic in oil over medium heat until celery and onion are tender, but not brown.
- Stir in the refried beans, taco sauce, green chili peppers and chili powder.
- Bring the mixture to a boil; reduce heat. Cover and simmer for 5 minutes.
- Gradually add small amounts of the shredded cheese to the refried beans, stirring occasionally, over low heat until the cheese is melted.
- Transfer the hot cheese-bean mixture to a fondue pot or chafing dish.
- Keep mixture warm.
