Rice With Beef Stew

  1. Mix garlics, coriander root and pepper by using blender or mortar. The mixture should be fine like a paste.
  2. In a medium size pot, slowly saute the mixture with low heat until the aroma comes out.
  3. Add cinnamon, star anis and bay leaves into the mixture sequentially. Saute each spice for 1 min before adding the next one. You should smell the aroma from the spices after a couple minutes.
  4. Add 1 cup of water and tomato sauce to the pot. Season with light and dark soy sauce.
  5. Add beef shank and water till cover all beef. Cover the pot and then simmer for 1 hr 15 min. (keep adding water if its level is too low)
  6. In the meanwhile, wash the rice 2 times with water. Drain all the washing water, then add 1.5 cup of water. Cook the rice by using rice cooker or pot.
  7. Cut potato onion and tomato into 4 wedges.
  8. After 1 hr 15 min, add potato and simmer for another 15 min. Then add onion and tomato respectively.
  9. Simmer until the beef is soft as you prefer and finally season with sugar. (Normally the sweetness from onion would be enough)
  10. Cut the beef into some pieces and put them on the top of rice. Pour the sauce on the beef, serve with couple slices of cucumber.
