Tofu Rice With Peanut Sauce

  1. Get the rice cooking, since this takes a while
  2. Drain water from tofu. Then place it on a cutting board and cut into cubes.
  3. Absorb more water out of the tofu by placing paper towels on top of the cubes, then placing another cutting board on top, flip over and place paper towels on the other side so that the tofu is sandwiched between two sets of paper towels and cutting boards. Then place a weight on top (like a knife block or something) to squeeze more water out. Let sit for a little while.
  4. Steam the green beans in a pot
  5. Cook the tofu in an oiled pan, adding a little bit of peanut sauce during the cooking
  6. Dish out the rice and add tofu & green beans, then pour peanut sauce on top and a dash of crushed red pepper flakes
