Blackberry, Quinao, Oatmeal, Greek Yogurt Muffins
- 1 cup flour quinao
- 1 1/3 cups gluten free quick oats
- 1 cup greek yogurt organic non-fat
- 2 eggs organic
- 1 pint blackberries mashed
- 1 banana small, mashed, 20 carbs
- 1/4 cup grape seed oil
- 1/2 teaspoon baking soda
- 2 teaspoons baking powder
- 3/4 teaspoon Himalayan pink salt
- 2 teaspoons agave syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 4 walnut halves for the top
- 1 tablespoon almond butter for the top when being eaten.
- In one bowl mash the blackberries.
- In another small bowl mash the banana.
- Mix all the dry ingredients.
- Mix all the wet ingredients including the Greek yogurt.
- Add the mashed banana to the wet ingredients.
- Add the the mashed blackberries to the wet ingredients. Stir.
- Add the bowl of wet ingredients to the dry ingredients.
- Preheat oven at 375.
- Cook for 18-20 mins.
