Sweet And Sour Pork
- 2 lb. lean pork shoulder, cut into 2 x 1/2-inch strips
- 1/4 c. flour
- 1/2 tsp. salt
- 1/4 Tbsp. drippings
- 1/2 c. water
- 2 Tbsp. cornstarch
- 1/4 c. brown sugar
- 1/4 c. vinegar
- 1 Tbsp. soy sauce
- 1 (1 lb. 4 1/2 oz.) can pineapple chunks
- 1 green bell pepper, cut in julienne strips
- 1 small onion, sliced thin
- Dredge meat in seasoned flour and brown well in drippings. Add water; cover pan and simmer for an hour.
- Combine cornstarch and sugar.
- Add vinegar, soy sauce and juice drained from pineapple.
- Cook on low heat, stirring constantly until mixture is thick and clear.
- Pour sauce over meat.
- Add pineapple, green pepper and onion.
- Heat through.
- Serve over cooked noodles or rice.
- Serves 6.
