Coffee Bar Cookies

  1. Cream shortening or margarine and sugar together; beat in egg until light.
  2. Sift dry ingredients together.
  3. Add half of hot coffee to creamed mixture, then dry ingredients and finally remaining coffee; stir until well blended after each addition. Fold in raisins and nuts.
  4. Spread batter in greased 9 x 14 x 1/2-inch jelly
  5. roll pan.
  6. Bake at 350u0b0 for 25 to 30 minutes. When cool, spread with frosting made by combining
  7. 1 tablespoon butter and 1 cup confectioners sugar with enough cold coffee to moisten.
  8. Cut into 3/4 x 2-inch bars.
