Coffee Bar Cookies
- 1/2 c. margarine or shortening
- 1 c. brown sugar
- 1 egg, beaten
- 1 1/2 c. sifted flour
- 1/2 tsp. baking powder
- 1/2 tsp. soda
- 1/2 tsp. cinnamon
- 1 c. hot coffee
- 1 c. seedless raisins
- 1 c. chopped nut meats
- Cream shortening or margarine and sugar together; beat in egg until light.
- Sift dry ingredients together.
- Add half of hot coffee to creamed mixture, then dry ingredients and finally remaining coffee; stir until well blended after each addition. Fold in raisins and nuts.
- Spread batter in greased 9 x 14 x 1/2-inch jelly
- roll pan.
- Bake at 350u0b0 for 25 to 30 minutes. When cool, spread with frosting made by combining
- 1 tablespoon butter and 1 cup confectioners sugar with enough cold coffee to moisten.
- Cut into 3/4 x 2-inch bars.
