Poached Turkey With Tuna Mayonnaise
- 4 1/2 pounds turkey breast deboned, rolled
- 1 carrot cut into chunks
- 1 stalk celery cut into chunks
- 1 onion cut into quarters
- 1 handful parsley sprigs fresh
- 1 bay leaf small
- mayonnaise Tuna
- 5 ounces tuna in oil canned, drained
- 4 anchovies
- 2 ounces baby capers drained
- 2 cups mayonnaise
- lemon juice to taste
- lemon zest to garnish
- watercress to garnish
- In a large pot, combine turkey, carrot, celery, onion, parsley and bay leaf. Add enough water to just cover. Bring to a boil, cover and simmer for 30 mins. Remove from heat and let turkey cool in liquid, covered.
- Meanwhile, to make the tuna mayonnaise, combine tuna, anchovies, 1 oz capers and 2 tbsp cold turkey cooking liquid in a food processor. Puree until smooth. Mix with mayonnaise and lemon juice. Season.
- Thinly slice turkey and arrange on a serving platter. Spoon tuna mayonnaise over top and sprinkle with remaining capers and lemon zest. Garnish with watercress.
