Coconut Almond Carrot Roll

  1. Mix
  2. flour,
  3. baking
  4. powder,
  5. salt
  6. and cinnamon.
  7. Beat sugar and
  8. oil
  9. at
  10. medium
  11. speed of electric mixer until well mixed. Stir in flour mixture.
  12. Add eggs, 1 at a time, beating well after each addition.
  13. Stir in carrots, nuts, raisins and 2/3 cuptf coconut.
  14. Pour into greased and floured 9-inch pan or 6 cup
  15. ring mold.
  16. Bake
  17. at
  18. 350u0b0 for 35 minutes, or until done.
  19. Cooltn pan
  20. 15
  21. minutes.
  22. Remove from pan and finish cooling.
  23. Frost with
  24. cream
  25. cheese
  26. frosting
  27. and cover with remaining coconut.
