Chicken Coriander Croquettes

  1. Chop the chicken breasts.
  2. Chop the onions, ginger, and coriander.
  3. In a bowl mix the egg, yogurt, 4 tablespoons of almond powder, curry powder, lemon juice, chicken, and a little bit of salt.
  4. Stir, cover, and marinate for 1 hour in a cool place.
  5. Pour 4 tablespoons of almond powder in a plate.
  6. Make the croquettes with the chopped chicken, and roll them in the almond powder.
  7. Heat the olive oil in the pan, and cook over low heat for about 10 minutes until golden.
  8. Turn over halfway through the cooking time.
  9. Sprinkle with curry powder, and serve with a salad.
