Chicken Coriander Croquettes
- 6 chicken breasts
- 3 green onions
- 1 3/16 inches ginger peeled
- 4 tablespoons coriander
- 1 egg
- 1 natural yogurt
- 8 tablespoons almond powder
- 1 1/2 tablespoons curry powder
- 1/2 lemon juice
- salt
- olive oil
- Chop the chicken breasts.
- Chop the onions, ginger, and coriander.
- In a bowl mix the egg, yogurt, 4 tablespoons of almond powder, curry powder, lemon juice, chicken, and a little bit of salt.
- Stir, cover, and marinate for 1 hour in a cool place.
- Pour 4 tablespoons of almond powder in a plate.
- Make the croquettes with the chopped chicken, and roll them in the almond powder.
- Heat the olive oil in the pan, and cook over low heat for about 10 minutes until golden.
- Turn over halfway through the cooking time.
- Sprinkle with curry powder, and serve with a salad.
