Pear And Rhubarb Crumble With Almond And Oat Topping
- 4 pears peeled, cored and sliced
- 1/2 cup granulated sugar
- 1 lemon juiced
- 1 pound rhubarb fresh or frozen, pieces
- 1 cup rolled oats
- 1/2 cup brown sugar packed
- 3 tablespoons butter melted
- 1/3 cup sliced almonds
- ice cream to serve
- Preheat the oven to 350u0b0F. Grease a 1 1/2-quart baking dish.
- Cook pears, granulated sugar and lemon juice in a large saucepan on medium heat for 4-5 mins, stirring, until tender. Add rhubarb and cook for 3-4 mins, until fruit is soft but still holding its shape.
- With a slotted spoon, transfer fruit from syrup to prepared dish. Taste and sprinkle with a little additional sugar if needed.
- Meanwhile, combine oats, brown sugar, butter and almonds in a bowl. Sprinkle over fruit.
- Bake for 30 mins, until golden and bubbling. Serve with ice cream.
