Pear And Rhubarb Crumble With Almond And Oat Topping

  1. Preheat the oven to 350u0b0F. Grease a 1 1/2-quart baking dish.
  2. Cook pears, granulated sugar and lemon juice in a large saucepan on medium heat for 4-5 mins, stirring, until tender. Add rhubarb and cook for 3-4 mins, until fruit is soft but still holding its shape.
  3. With a slotted spoon, transfer fruit from syrup to prepared dish. Taste and sprinkle with a little additional sugar if needed.
  4. Meanwhile, combine oats, brown sugar, butter and almonds in a bowl. Sprinkle over fruit.
  5. Bake for 30 mins, until golden and bubbling. Serve with ice cream.
