Beef And Broccoli Stir-Fry

  1. Combine chicken broth, soy sauce and wine.
  2. Cut beef into thin strips, about 1 inch long.
  3. Cut on the diagonal.
  4. Season meat with salt and pepper.
  5. Cut broccoli into flowerets about 2 inches long and slice celery diagonally into 1/2-inch slices.
  6. Chop onions. Preheat wok or skillet over high heat for 2 minutes.
  7. Add oil, pouring around sides of wok or swirl around skillet.
  8. Heat for 2 minutes.
  9. Stir-fry meat and onions for 3 minutes.
  10. Add broccoli, celery and mushrooms, stir-fry 3 to 4 minutes longer.
  11. Add bean sprouts.
  12. Add chicken broth mixture.
  13. Combine cornstarch and water and blend into meat and vegetables.
  14. Bring to a boil, stirring for one minute.
  15. Can be served over rice, if desired.
  16. Can also be made with a turkey tenderloin cut similar to the beef.
