Rote Grutze With Waffles
- raspberries
- red currant
- cranberries
- 2 1/16 cups fruits
- water 1 lt.
- 4 tablespoons cornstarch
- red wine
- 5 9/16 tablespoons agave syrup
- 5/8 cup water
- 2 3/8 cups flour
- 3/4 cup butter melted
- 4 large eggs
- 5 9/16 tablespoons agave syrup
- 1 teaspoon baking soda
- 2 teaspoons vanilla extract
- 2 teaspoons baking powder
- ground cinnamon
- superfine sugar
- Remove the stems of the fruit. Set aside 150 grams to add at the end.
- Place the other 350 grams in a saucepan and add the water. Bring to a boil and cook for 30 minutes stirring constantly.
- After 25 minutes, add the red wine.
- Once the 30 minutes have passed, remove from the stove and strain. Place back on the stove.
- Dissolve the cornstarch in as little water as possible. Add the cornstarch and lime juice to the fruit while boiling. Stir vigorously to prevent lumps.
- Add the agave syrup and taste. Add more if needed.
- Add the rest of the fruit and remove from the stove. Chill in the refrigerator.
- Bring the water to a boil and mix with the flour.
- Add the butter and eggs. Mix.
- Add the agave syrup, baking soda, vanilla extract, baking powder, and cinnamon.
- Turn the waffle iron on.
- Spread some butter on the hot waffle iron. Pour the batter in and cook the waffles.
- Sprinkle with superfine sugar and serve the warm waffles with Rote Grutze on the side.
