Shrimp Noel
- 1/2 lb. fresh mushrooms, sliced
- 1 c. chopped green pepper
- 1 yellow onion, chopped
- 1 c. chopped celery, strings removed before chopping
- 4 Tbsp. butter or margarine
- 1 (4 oz.) jar diced pimento
- 2 (16 oz.) cans stewed tomatoes with juice
- 1 1/2 to 2 1/2 tsp. chili powder
- 1 1/2 to 2 1/2 tsp. ground cumin
- freshly ground black pepper
- 3 c. brown rice, cooked in chicken bouillon
- 3 c. cleaned, cooked shrimp
- salt to taste
- fresh grated Parmesan cheese
- Heat oven to 350u0b0.
- Saute mushrooms, green pepper, onion and celery in butter or margarine until tender, but not darkened.
- Add pimento and tomatoes and stir in chili powder, cumin and black pepper.
- Mix in cooked rice and shrimp.
- Add salt to taste and adjust other seasonings as desired.
- Sprinkle with Parmesan cheese and drizzle with melted butter or margarine.
- Bake, uncovered, for 30 minutes.
- Makes 10 to 12 servings.
