Sauteed Bottle Gourd With Dried Salted Red Snapper
- bottle gourd 1 large, upo, peeled, spongy and seeded part removed; sliced into bite-sized pieces
- 2 tablespoons cooking oil
- 3 cloves garlic minced
- 1 onion medium sized, sliced
- 2 tomatoes medium sized, diced
- rice wash or water, optional
- 1 pound red snapper dried salted, or any dried salted fish - soaked for at least 4 hours then cut to pieces
- ground pepper to taste
- Heat cooking oil in a sauce pan or wok; add garlic, cook a little
- Add onions, wait fr onions to cook then add tomatoes, wait for it to get cooked and wilt - lower heat in order not to burn the veggies (about 3 minutes)
- Add the bottle gourd, saute for minute or two until it is a little cooked but not too soft
- Add the dried salted fish and saute for a minute
- Add preferred amount of rice wash or water for soup. You can skip the water and your dish will still have the sauce from sauteeing
- Cover, wait for the water to boil, season to taste. Turn the fire off. It may not be necessary to add salt since the fish will render the perfect balance of saltiness in the dish.
