Organic Chickpea Spaghetti With Roasted Vegetables

  1. Toss vegetables lightly with olive oil, season with salt & pepper. Roast in a 400 degree oven on a baking sheet in a single layer until tender and slightly caramelized
  2. Whisk dressing ingredients together then toss with spaghetti and vegetables. Season with salt & pepper. Garnish with parsley and green onion.
