Organic Chickpea Spaghetti With Roasted Vegetables
- 1 8 oz box chickpea spaghetti cooked
- 1/4 cup red pepper sliced into batons
- 1/4 cup orange pepper sliced into batons
- 1/4 cup yellow pepper sliced into batons
- 1/3 cup zuchini sliced into half-moons
- 1/3 cup shitake mushrooms sliced
- 1/2 red onion sliced into rings
- olive oil
- salt & papper
- DRESSING
- 1 tbsp olive oil
- 1 tbsp toasted sesame oil
- 1 tbsp soy sauce (or gluten free tamari)
- 1 tbsp seasoned rice wine vinegar
- several grinds black pepper
- Toss vegetables lightly with olive oil, season with salt & pepper. Roast in a 400 degree oven on a baking sheet in a single layer until tender and slightly caramelized
- Whisk dressing ingredients together then toss with spaghetti and vegetables. Season with salt & pepper. Garnish with parsley and green onion.
