Lemon And Poppyseed Muffins
- 2 1/2 cups self raising flour
- 3/4 cup sugar
- 3 tablespoons poppy seeds
- 1 lemon zested
- 3/4 cup milk
- 1/2 cup lemon juice
- 7 tablespoons butter melted
- 1 large egg lightly beaten
- powdered sugar to dust
- Preheat oven to 350u0b0F. Line a 12-hole muffin pan with paper cases or spray lightly with oil. Sift flour into a large bowl. Stir in sugar, poppy seeds and zest. Make a well in center of dry ingredients.
- In a small bowl, blend together milk, juice, butter and egg. Mix into dry ingredients until just combined (about 16 strokes).
- Spoon mixture into the paper cases until two-thirds full. Bake for 15-20 mins, until cooked when tested. Transfer to a wire rack to cool. Dust with powdered sugar. Store in an airtight container.
