Beef Satay
- 1 tablespoon peanut oil
- 1 pound sirloin steak or rump, thinly sliced
- 1 red onion large, peeled and thickly sliced
- 1 red pepper deseeded, thinly sliced
- 1/2 cup crunchy peanut butter
- 1/4 cup stir fry sauce satay
- 2 tablespoons sweet soy sauce
- 2 teaspoons lime juice
- spring onions sliced, to serve
- steamed rice to serve
- Heat 1/2 tbsp oil in a wok over high heat, stir-fry steak for 2-3 mins, until browned. Set aside. Add remaining oil, saute onion and pepper for 2-3 min, until onion is tender. Add 1/2 cup water, peanut butter, satay sauce, sweet soy sauce and lime juice. Bring to a boil then reduce heat and simmer for 8-10 mins, until sauce has thickened slightly. Return steak to pan and simmer for 4-5 mins, until steak is cooked through. Garnish with spring onion and steamed rice.
