Glazed Pear And Orange Arugula Salad
- 1/4 cup Smucker's(R) Simply Fruit(R) Orange Marmalade Spreadable Fruit
- 4 teaspoons white balsamic vinegar
- 3 tablespoons Crisco(R) Pure Canola Oil
- salt
- pepper
- 1 tablespoon butter
- 2 bosc pears peeled and sliced
- 1 tablespoon firmly packed brown sugar
- 2 cups arugula
- 1/4 cup crumbled blue cheese
- 1/4 cup chopped pecans
- WHISK together spreadable fruit, vinegar and oil in small bowl. Season with salt and pepper.
- MELT butter in medium skillet over medium-high heat. Add pear slices. Cook 1 to 2 minutes or until pears are sizzling. Stir in brown sugar. Cook 1 to 2 minutes more, turning once, until evenly glazed. Remove from heat.
- DIVIDE arugula among 4 salad plates. Top each with pear slices and blue cheese. Drizzle with vinaigrette. Sprinkle with pecans. Serve immediately.
- Vinaigrette can be made up to 3 days ahead. Chill until ready to use.
