Simmered Spicy Meatballs
- 1 pound ground beef
- 1/2 cup bread crumbs soft
- 3 tablespoons parsley chopped
- 1 egg
- onion 1 sm., grated
- 2 teaspoons grated lemon rind
- salt
- freshly ground pepper
- 3 tablespoons cooking oil
- onion 1 med., finely chopped
- 1/2 teaspoon curry powder
- 1 teaspoon cinnamon
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 2 cups beef bouillon
- 1/4 cup raisins chopped
- salt to taste
- Mix together all ingredients for meatballs except oil. Heat the oil in a heavy frying pan and brown meatballs over moderate heat. Remove from pan and set aside. While you make the sauce.
- Add onion the same pan (you may need a little extra oil) and stir until starting to soften. Add curry, cinnamon, cumin and coriander and stir 1 minute. Add bouillon, raisins and salt to taste; bring to a boil. Return meatballs to the pan, cover and simmer 30 minutes.
- Taste sauce and adjust seasoning, adding a little sugar if desired. Serve meatballs and sauce in a heated dish, with rice, chutney and diced cucumbers. Serves 4.
