Vlad'S Sensational Vegan Chili
- 2 medium onions
- 2 green peppers
- 3 stalks celery
- 1 Tbsp cumin
- 1 tsp cayenne pepper
- 1 tsp chili powder
- salt and freshly ground pepper, to taste
- 2 garlic cloves, minced or crushed
- 1 tsp basil
- 1 tsp oregano
- 1 tsp cinnamon
- 1 lemon
- 2 341mL cans whole kernel crisp corn
- 1 540mL can red kidney beans
- 1 540mL can black beans
- 3 vegan sausages (Yves kolbasa, etc)
- 3 730mL cans diced tomatotes
- 1 Tbsp cooking oil
- In a (very) large pot, saute the onions in oil for a few minutes, until they start softening.
- Add garlic and spices and saute for a minute more.
- Add peppers and saute for approx 3 minutes.
- Add the rest of the ingredients, bring to a boil, reduce heat and simmer for about 20 minutes or until the flavours have mixed well and the vegetables are tender.
