White Clam Sauce Primavera
- 8 ounces whole wheat linguine
- 2 cups broccoli florets or baby broccoli
- 2 tablespoons promise buttery spread
- 1 cup carrots chopped
- 1 cup onion chopped
- 1 cup red bell pepper chopped
- 2 cloves garlic finely chopped
- 24 clams, well scrubbed
- 1 cup fat free reduced sodium chicken broth
- 1/4 cup fat free reduced sodium chicken broth
- Cook linguine according to package directions, adding broccoli during last 5 minutes of cooking. Drain and keep warm.
- Melt Promise(R) Buttery Spread in a 12-inch nonstick skillet, over medium-high heat and cook carrots, onion and red pepper, stirring occasionally, 5 minutes or until tender. Stir in garlic and cook 30 seconds.
- Add clams, broth and wine and bring to a boil over high heat. Reduce heat and simmer covered 5 minutes or until shells open. (Discard any unopened shells.) In large serving bowl, toss with hot cooked linguine mixture.
