Oatmeal Yogurt Pancakes
- 1 egg or 2 egg whites
- 6 ounces lowfat yogurt peach flavored, or other flavor
- 1/2 cup quick cooking oats or old-fashioned
- 1/2 cup all purpose flour
- 1 cup skim milk or more
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 2 teaspoons vegetable oil
- 1/2 teaspoon baking soda
- yogurt Additional, if desired
- Heat griddle or skillet over medium heat or to 375F. Griddle is ready when a few drops of water sprinkled on the surface jump around. Grease heated griddle with margarine if necessary. Beat egg in large bowl, using hand beater; stir in remaining ingredients except additional yogurt. (For thinner pancakes, stir in an additional 2 to 4 tablespoons skim milk.)
- For each pancake, pour about 3 tablespoons batter from tip of large spoon or from pitcher onto hot griddle. Cook until puffed and dry around edges.
- Turn and cook other sides until golden brown. Serve with additional yogurt.
