Cilantro Hummus
- 1 3/4 cups chick peas cans, drained
- 1 clove garlic peeled and finely diced
- 1/2 bunch coriander finely chopped
- 4 tablespoons hazelnuts
- 4 tablespoons pine nuts
- 1 lemon juiced
- 4 tablespoons hazelnut oil
- 1 teaspoon ground cumin
- 1 teaspoon sesame seeds
- 2 tablespoons olive oil
- 4 slices toast
- coriander to garnish
- Mix the chick peas, garlic, oil, cumin, 3 tbsp of the hazelnuts and 3 tbsp of the pine nuts in a blender. Add hazelnut oil, lemon juice, salt and pepper and puree until creamy. Stir in the chopped cilantro.
- Roughly chop the remaining 1 tbsp of hazelnuts and stir into the hummus with 1 tbsp pine nuts. Drizzle olive oil over the hummus and sprinkle with sesame seeds. Garnish with some cilantro leaves.
