Cranberry Aspic
- 2 cups fresh cranberries washed and picked over
- 2 pounds cooking apples large red, washed, cored and chopped
- 1 bar agar agar
- 1 1/2 cups apple cider or unfiltered apple juice
- 1/4 cup maple syrup
- 1 cinnamon stick
- 1 lemon
- lettuce leaves
- Run the agar under cold running water to soften; squeeze out water.
- Place cider in a large saucepan and shred agar into it. Add the maple syrup, cinnamon stick, and cook over medium heat agar is dissolved.
- Add apples and cranberries. Cook until apples are soft and cranberries pop, 8 to 10 minutes. Mix thoroughly, then remove from heat and add lemon zest. Discard the cinnamon.
- Pour into a 1 1/2 quart ring mold.
- To serve, line a plate with lettuce leaves; unmold aspic onto leaves.
