Fromage Blanc And Speculoos Pie
- 1 13/16 cups cookies Speculoos
- 5 5/8 tablespoons butter
- 3 eggs
- 6 2/3 cups fromage blanc
- 6 1/3 tablespoons granulated sugar
- 1 tablespoon corn starch
- 1 lemon zest organic
- Preheat oven to 180 degrees Celsius.
- Crush the Speculoos cookies in a freezer bag with the help of a rolling pin.
- Melt the butter and incorporate the crushed cookies. Mix to form a thick dough.
- Spread this mixture into a springform pan. Refrigerate.
- Separate the yolks from the whites.
- In a medium-sized bowl, mix the yolks with the fromage blanc, the sugar, the corn starch, and the zest of 1 lemon.
- Whisk the whites until they are stiff, and incorporate gently to the preparation.
- Pour it into the pan, on the speculoos crust.
- Bake it for 30 minutes.
- Let it cool, overnight if possible.
- You can serve with red fruit coulis.
