Fromage Blanc And Speculoos Pie

  1. Preheat oven to 180 degrees Celsius.
  2. Crush the Speculoos cookies in a freezer bag with the help of a rolling pin.
  3. Melt the butter and incorporate the crushed cookies. Mix to form a thick dough.
  4. Spread this mixture into a springform pan. Refrigerate.
  5. Separate the yolks from the whites.
  6. In a medium-sized bowl, mix the yolks with the fromage blanc, the sugar, the corn starch, and the zest of 1 lemon.
  7. Whisk the whites until they are stiff, and incorporate gently to the preparation.
  8. Pour it into the pan, on the speculoos crust.
  9. Bake it for 30 minutes.
  10. Let it cool, overnight if possible.
  11. You can serve with red fruit coulis.
