Healthy Dinner: Roasted Vegetables With Feta (Goat) Cheese Recipe

  1. Start with washing your aubergine and slice it into slices of your desired thickness. Heat up a large pan on medium and season your aubergine with some olive oil, herbs and a pinch of salt and add it to your pan (I decided to cook them separetly from the other vegetables since they tend to soak up all the oil and not leave much for the remaining vegetable but you can cook all your vegetables together if you wish).

Wash all remaining vegetables and slice them into desired sizes (red onion, white onion, carrot, chilli pepper, courgette, garlic and tomato).nnWhen your aubergine is ready remove it from the pan and set aside. ndd all your remaining vegetables to the pan except from the tomato. ndd olive oil and a pinch of salt and season with all your dried herbs. Fry it on medium/high heat for about 5 minutes. Add your fresh tomato and continue for about 3 minutes. Your vegetables are ready now. Add your aubergine and add a healthy topping of grated feta cheese on top.
  3. Your meal is ready.nnEnjoy. nnTip: nYou can add some corn for a sweeter and deeper flavor. n Serve/eat as soon as you add your cheese - it melts soon. n You can use the meal to accompany any meat it works perfectly.
