My Grandma'S Sweet Potato Cobbler
- 3 medium size sweet potatoes
- 2 sticks butter
- 2 1/2 c. sugar
- 1 tsp. vanilla
- 1 can biscuits
- Peel potatoes and cut in lengthwise slices.
- Place in pot with just enough water to cover.
- Stew for 15 minutes or until tender. With biscuit dough rolled into thin strips, grease sides of deep casserole dish and place strips of dough around sides.
- Pour in half of the potatoes and juice and spread on top with 1 cup sugar, 1 stick butter and 1/2 teaspoon vanilla.
- Layer strips of dough across top, pouring remaining potatoes with juice.
- Add 1 cup sugar, 1 stick butter and 1/2 teaspoon vanilla as before.
- Cover with strips of dough sprinkled with 1/2 cup sugar.
- Cut small piece of butter to place on top.
- Cover with tinfoil and cook in 350u0b0 oven for 30 minutes.
- Remove tinfoil to brown top layer. Enjoy!!!
