Squid With Bacon And Mushrooms
- 1/2 onion small
- 3 garlic cloves
- olive oil
- 1/3 piece bacon
- 1 fresh mushrooms pack
- 1/3 red pepper
- 1 kg. clean squids (fresh or frozen)
- 1/2 cup white wine
- 1 tablespoon tomato paste
- salt to taste
- 1 egg yolk
- 1 tablespoon mustard
- 4 sprigs parsley
- In a pan, add the chopped onion and garlic. Drizzle with a little olive oil, and stir-fry.
- When the onion starts to get translucent, add bacon cut into cubes, sliced mushrooms, and peppers cut into thin strips. Cook for a few minutes. Finally, add the squid cut into slices, the white wine, tomato paste, and salt. Simmer over low heat until the squid are tender (about 30 minutes).
- In a bowl, beat the egg yolks, and add the mustard and parsley sprigs. When the squid are ready, add this mixture slowly, mixing well, and let the sauce thicken for about 3 minutes. Serve very warm with white rice.
