Pita Bruschetta With Hummus And Salsa
- 4 ounces chickpeas canned, drained and rinsed
- 1 clove garlic peeled and chopped
- 1/2 cup tahini sesame paste
- 3 tablespoons lime juice
- 1 cup low fat plain yogurt
- toasted sesame seeds
- black olives chopped, optional
- 1/2 pound tomatoes quartered, deseeded and diced
- 1 onion peeled and diced
- 2 tablespoons olive oil
- 1/2 teaspoon crushed red pepper
- 2 tablespoons balsamic vinegar
- 4 pita breads cut into strips
- 1/2 pound feta cheese cut into thin slices
- 1/2 pound cherry tomatoes red and yellow, halved
- 1 tablespoon chives chopped
- To make the hummus: Mash the chickpeas in a bowl with the garlic, tahini, lime juice, yogurt, and salt and pepper to taste. Transfer to a serving bowl, sprinkle with sesame seeds and garnish with chopped black olives, if you like.
- To make the salsa: Mix the tomato, onion, olive oil, red pepper and vinegar, then season to taste.
- Spread the pita bread strips with hummus or salsa then arrange the cheese and cherry tomatoes on top. Sprinkle with chives.
