Bean-And-Cheese Burritos
- 8 flour tortillas 6 inch
- 1 cup chopped onion
- 2 tablespoons water
- 1 can nonfat refried beans 16 ounce
- 1 can green chili pepper 4 ounce drained
- hot pepper sauce several dashes bottled
- 1 cup cheese lowfat monterey jack, shredded
- 3 cups lettuce shredded
- 1 cup salsa bottled
- Wrap tortillas in foil. Heat in 300 degree oven about 10 minutes to soften.
- Meanwhile cook the onion in the water in a medium saucepan until tender.
- Donot drain. Stir in the refried beans, diced green chilli peppers, and hot pepper sauce. Cook and stir until heated through. Spoon about 1/3rd cup ofthe bean mixture onto each tortilla just below the center. For each burritosprinkle about 3 Tbl of the cheese atop the bean mixture; roll up tortilla.
- Place on a foil-lined baking sheet. Bake, Loosely covered, in a 350 degreeoven about 10 minutes or until heated through. To serve, place 3/4 cup of the shredded lettuce on each plate and top with 2 burritos. Serve with thesalsa.
