Vegan Grain-Free Bechamel
- 1/2 cauliflower
- 2 1/4 tablespoons extra virgin coconut oil
- 5 3/16 tablespoons chickpea flour better if sprouted
- 2 1/8 cups nut milk macadamia
- 1 pinch nutmeg
- salt
- Steam the Cauliflower for 15 minutes untill soft but firm, you can add some other veggies to the steamer while you are doing that. I added carrots and broccoli.
- While waiting for the cauliflower to cook, turn on the oven and start preparing the bechamel.nnIn a small pan pour the milk and let it heat on low fire for a minute. Then add the coconut oil and mix untill it's melted. Add the flour, salt, pepper and nutmeg, and start mixing with a whip until it gets creamy. Turn off the fire as soon as it starts getting creamy or it will solidify.
- Once your cauliflower is steamed, take a baking pan that can fit it and sprinkle it with a little bit of salt and avocado oil (just a few drops). Cover the cauliflower with your bechamel and sprinkle with nutmeg.
- Bake in the oven for 10 minutes 180u0b0C on grill + fan.
- Take your beautiful dish out (and sprinkle with some red berries), serve with some colourful veggies and enjoy!
