Chicken Breast Casserole
- 2 pkg. (10 oz. each) frozen broccoli spears
- 6 chicken breast halves, cooked, skinned and cut into chunks
- 2 cans (10 1/2 oz. each) cream of chicken soup
- 1/2 c. milk
- 1 tsp. lemon juice
- 3/4 c. mayonnaise
- 1/2 tsp. curry powder
- 1 c. grated sharp Cheddar cheese
- 1/2 c. stuffing mix
- 1/2 c. bread crumbs
- 2 Tbsp. margarine, melted
- Cook broccoli by package directions but slightly undercook; drain.
- Arrange in a greased 3-quart (9 x 13-inch) baking dish. Arrange some of the broccoli florets around the edge of the casserole.
- Arrange chicken over broccoli.
- Combine undiluted soup, milk, lemon juice, mayonnaise, curry powder and cheese spread over mixture in casserole.
- Combine stuffing mix, bread crumbs and melted margarine.
- Sprinkle over top.
- Bake in a 350u0b0 oven for 40 minutes or until bubbly.
- Serves 10.
