Rosemary-Garlic Spice Rubbed Boneless Pork Roast
- 2 tablespoons olive oil
- 1 tablespoon smoked paprika
- 1 tablespoon fresh rosemary chopped
- 1 teaspoon chili powder each, garlic powder and onion powder
- 5 pounds boneless pork loin with string
- white onions 3, 12 oz. medium, peeled and cut into wedges
- 8 baby carrots with green tops, trimmed and peeled
- fresh rosemary for garnish
- In a small bowl, stir together the oil, paprika, rosemary, chili, garlic and onion powders, season with salt and pepper. Rub mixture evenly over pork. Place in roasting pan and refrigerate for 1 hour.
- Heat oven to 450u0b0F. Roast pork for 10 minutes, reduce oven to 325u0b0F and add vegetables to roasting pan, coated with any pan drippings. Roast until thermometer inserted into the center registers between 150 and 155u0b0F. (The roast in the photo took 1 1/2 hours.)
- Garnish with rosemary, onions and carrots.
