Pear And Hazelnut Salted Caramel Pie With Chocolate Graham Crust

  1. Preheat oven to 375 degrees F.
  2. Place graham crackers, sugar and cocoa powder in a KitchenAid(R) 14-Cup Food Processor and process on high for a few minutes until you have fine crumbs.
  3. Melt the butter in a KitchenAid 1.5-Quart Stainless Steel Saucepan and add it to the crushed graham crackers and cocoa mixture in the Food Processor and blitz until all ingredients are mixed together well and evenly.
  4. Pour the graham crust mixture into your KitchenAid(R) 9" Pie Pan, pat it down evenly and bake it for 5 minutes. Let it cool on a wire rack while you make the salted caramel sauce.
  5. To make the filling, peel, core and cut the pears into thin slices.
  6. Crush the hazelnuts in a large plastic bag until the nuts are broken into large pieces.
  7. Add the spices, flour, sugar and lemon juice to the pears and toss them all together gently with your hands in a large mixing bowl. Then start building the pie in layers.
  8. Start by layering 1/2 of the pears on the bottom of the pre-baked chocolate graham crust in a circular pattern working in to the center, and add 1/2 of the crushed hazelnuts on top.
  9. Pour 1/2 of the caramel sauce over the pears. Repeat the layering of pears, hazelnuts and caramel again until the pie crust is filled to the top.
  10. Place the 9" Pie Pan on a baking sheet in the oven and bake for about 20 minutes. Reduce the heat to 325-350 and bake for another 10 minutes or so until the pears are done and the caramel sauce is bubbly.
  11. Cool the pie on a wire rack completely and slice into wedges. Serve with a side of vanilla ice cream or whipped cream if desired.
