Holiday Fruit Bars
- 1/2 c. soft butter
- 1 c. granulated sugar
- 2 eggs
- 1 tsp. vanilla
- 2/3 c. sifted flour
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1 c. chopped nuts
- 1/2 c. red candied cherries, halved
- 1 c. sliced pitted dates
- 1/2 c. each: sliced dried apricots and figs
- very fine granulated sugar
- Cream butter; add 1 cup sugar and cream until light and fluffy. Add eggs, one at a time, beating thoroughly after each.
- Add sifted dry ingredients, nuts and fruits.
- Mix well and spread batter in a greased 9 x 13-inch pan.
- Bake in moderate oven at 350u0b0 for about 45 minutes.
- Let stand until cold or overnight.
- Then cut in 3 x 1-inch bars and roll each bar lightly in very fine granulated sugar (store in airtight container).
- (Try scissors in hot water to cut fruit.)
- Keeps well, if hidden!
