Snickerdoodle Mug Cake
- 4 teaspoons Swerve
- 1/2 teaspoon ground cinnamon
- 2/3 cup almond flower
- 1 teaspoon baking powder
- 1/8 teaspoon cream of tartar
- 1 large egg
- 2 tablespoons melted butter or avocado oil
- 2 tablespoons water
- 1/4 teaspoon vanilla extract
- 1 pinch salt
- Whisk together 2 tsp Swerve and cinnamon for filling
- In a medium bowl, whisk together almond flower, remaining sweetener, baking powder, cinnamon, salt, and cream of tartar
- Add Egg, Butter/Oil, water, and vanilla extract and stir until well combined
- Divide half batter into two coffee mugs. Sprinkle cinnamon filling on top and fill the rest of batter into mugs
- Cook on high in microwave for one minute until puffed and just barely cooked through
- Remove and Serve immediately. Add cream or milk if desired
