Persian-Style Stew Of Chicken With Aubergines & Courgettes
- 2 red onions medium, finely chopped
- 4 tablespoons cooking oil I like extra-virgin rapeseed oil
- 2 aubergines large or 4 small, sliced 2cm thick
- 2 courgettes medium, sliced 2 cm thick
- 4 chicken breasts scored about 2mm deep all over with a sharp knife
- 1 3/8 tablespoons butter or 2 tbsp oil
- 1 teaspoon turmeric
- 1 teaspoon sweet smoked Spanish paprika optional
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cinnamon
- 1/4 teaspoon black pepper
- 1 pinch cardamom
- 1 teaspoon salt or to taste
- plum tomatoes A handful of small
- 1 cup tomato juice or boiling water
