Persian-Style Vegetarian Mixed Rice With Aubergine
- 1 white onion large, or 2 small, finely chopped
- 4 tablespoons oil extra virgin rapeseed oil works very nicely
- 2 cloves garlic minced
- 1 aubergines large or 2 small, unpeeled, cut into cubes
- 4 1/8 cups mushrooms brown, or other, thickly sliced
- 2 red pepper seeded and cut into small squares
- 2 jalapeno thinly sliced, or substitute chillies, or omit if you wish
- plum tomatoes A handful of tiny
- 1 teaspoon turmeric
- 2 teaspoons sweet smoked Spanish paprika
- 1 1/2 teaspoons cumin seeds whole, lightly crushed
- 2 cups arborio rice
- 4 1/4 cups boiling water or vegetable or other stock
- 1 pinch saffron ground
- 1 teaspoon salt less if using stock
- chopped parsley or coriander to garnish
