More Healthy Bolognese: Turkey And Sun Dried Tomatoes Bolognese Recipe

  1. Take a large pan and heat it up on medium heat. Add one tablespoon of the oil form your sundried tomatoes and brown our turkey mince. Season with salt, white and black pepper. Brown your meat. This will take you about 5 minutes. Remember the browning adds great taste. In the process add your dried paprika / cayenne pepper as well. Stir well and do not let your paprika powder to burn.ndd your wine and set on low heat. nnIn a food processor add your onion/s, chilli and garlic and leave on high speed for few minutes. Then add your tinned tomatoes and leave it on until you have a smooth consistency (it will not take you longer than a minute).
  2. Add your tomato sauce to the pan with the meat and wine and stir well. Add your stock (and water if you used a strong stock) and stir well. Set your pan on medium/high heat and leave it to boil. Cover your pan so you do not get tomato sauce all over your kitchen. net your timer for 20 minutes. nnAfter 20 minutes your sauce have reduced nicely and the tasted have come together. It is time to cut you dried tomatoes and then add them to the sauce together with the infused oil. Leave on low/medium heat - depending on how much you still need to reduce your sauce (you can add a little extra water if you are afraid it is too thick and will start to burn). Season with a teaspoon of sugar or vinegar.
  3. Boil a while kettle and in a large pot start to boil your pasta in a well salted water. When your pasta is almost ready take about a 1/2 a cup of the starchy pasta water and add it to your Bolognese sauce. Drain your pasta and put it back in the pot. Add a teaspoon of butter and cover with a lid. nnYour sauce should be ready now with the right consistency. If not you can speed it up with putting it on higher heat but do be careful so it does not burn. When your sauce is ready add a teaspoon of butter and leave it there to melt. Stir well. nnServe your sauce on top of your pasta. nnEnjoy.
