Franke'S Fruit Cake Cookies
- 1/2 c. butter or margarine
- 1 c. firmly packed light brown sugar
- 4 eggs, beaten
- 2 1/2 c. all-purpose flour
- 2 c. broken pecans
- 1/2 lb. candied pineapple, chopped
- 1/2 lb. candied cherries, chopped
- 1/4 lb. candied orange peel, chopped
- 1/4 lb. candied lemon peel, chopped
- 1 tsp. soda
- 3/4 tsp. ground cardamom (optional)
- 1/2 c. all-purpose flour
- Cream butter and sugar.
- Add beaten eggs and mix well.
- Add 2 1/2 cups flour and mix.
- Combine chopped nuts and fruit.
- Add soda and cardamom to the 1/2 cup flour.
- Add this dry mixture to nuts and fruits and stir to coat.
- Add to creamed mixture; mix well. Drop by teaspoonfuls onto greased cookie sheet.
- Bake at 275u0b0 for 12 to 15 minutes.
- Yield:
- 6 dozen.
