Sauteed Chicken & Vegetables Over Spaghetti Squash
- 1 spaghetti squash small, (about 2 1/4 lbs ), halved lengthwise and seeded
- 2 tablespoons promise buttery spread
- 1 tablespoon grated Parmesan cheese
- 1 zucchini large, chopped
- 1 clove garlic finely chopped
- 1 cup cherry tomatoes quartered
- 1 tablespoon fresh basil leaves thinly sliced, optional
- 1/2 pound boneless, skinless chicken breast halves
- 1/4 cup water
- Arrange uncovered squash cut side down in 11 x 7-inch baking dish; add water. Microwave uncovered at HIGH 10 minutes or until tender. Let stand 5 minutes. Gently scrape squash with fork to pull apart spaghetti-like strands; discard shallots. Toss squash, 1 tablespoon Promise(R) Buttery Spread and cheese in medium bowl.
- Meanwhile, melt remaining 1 tablespoon Spread in 12-inch skillet and cook chicken, stirring occasionally, 6 minutes or until chicken is thoroughly cooked. Remove chicken and keep warm.
- Evenly divide squash between 2 dinner plates, then top with chicken mixture. Season, if desired, with freshly ground black pepper.
- Add zucchini to same skillet and cook, stirring occasionally, 5 minutes or until tender. Stir in tomatoes and garlic and cook 2 minutes or until tomatoes are starting to break down. Stir in basil. Return chicken to skillet.
