Pumpkin Hummus With Harissa Sauce

  1. Pre-heat the oven to 200C.
  2. Wrap the pumpkin in aluminum foil previously brushed with oil, as 'en papillote.'
  3. Place on a baking tray and cook for 45 minutes or until soft and tender. Leave to cool.
  4. Once cool, chop into pieces and place in a food blender along with the chickpeas, garlic, tahini, harissa, olive oil, and a pinch of salt.
  5. Blend all the ingredients together, adding water to the desired thickness.
  6. Season to taste and serve with a drizzle of oil and harissa.
  7. Serve with pitta bread.
