Pumpkin Hummus With Harissa Sauce
- 1 5/8 cups pumpkin peeled and halved
- 2 cups chickpeas canned, drained
- 2 cloves garlic peeled and chopped
- 2 tablespoons tahini paste
- 1/2 tablespoon harissa (sauce)
- 2 tablespoons olive oil + a little extra for garnish
- 5/8 cup water
- Pre-heat the oven to 200C.
- Wrap the pumpkin in aluminum foil previously brushed with oil, as 'en papillote.'
- Place on a baking tray and cook for 45 minutes or until soft and tender. Leave to cool.
- Once cool, chop into pieces and place in a food blender along with the chickpeas, garlic, tahini, harissa, olive oil, and a pinch of salt.
- Blend all the ingredients together, adding water to the desired thickness.
- Season to taste and serve with a drizzle of oil and harissa.
- Serve with pitta bread.
